Ingredients

    3 Hard Boiled Eggs
    1 1/2 Tbsp Light Mayonnaise
    1 tsp Dijon Mustard
    .25 cup of onion chopped
    1 tsp cayenne
    dash of Salt
    dash of Pepper
    1 tsp Celery seed
    1 tsp ground mustard
    2 leaves of Romaine Lettuce
    1 slice of whole wheat bread

Directions

Combine the top 9 ingredients in a bowl. Smash and mix all together. Layer bread, lettuce and than about half of the egg salad. Enjoy with a fork.

Serving Size: makes about 2- 1 cup servings
