Introduction

A simple tomato soup I learned to make in Spain. This takes your boring tomato soup and elevates it by adding complimentary flavors of orange juice and onions. Serve cold, room temperature, or hot. Ingredients

    Tomatoes
    Orange Juice
    Onions (or carrots)
    Salt
    White Pepper
    Butter
    Raw Sugar
    Water (or chicken broth)

Tips

Substitutions: Chicken broth for water to add protein or depth (especially good in wintertime for hot soup version)...or, use carrots for onion if desired.


Directions

In soup pot, sautee onions in butter until tender (approx 2 min). Add tomatoes, water, salt and pepper (slow rolling boil for approx 3 min). Using stick/wand blender in pot (or blender - being careful to allow hot contents to vent), puree fully until smooth texture. Serve hot, or allow to cool, or place in refridgerator to chill.

Serving Size: makes 1-cup serving (easily multiplied)
