Introduction

Ingredients

    3/4 c. quinoa
    1 c. onions, chopped
    5 cloves garlic, minced
    1.5 c. chicken or vegetable broth
    1 t. coriander
    1 heaping teaspoon grown cumin
    1/4 t. cayenne pepper
    1 can sweet corn
    2 cans black beans, drained and rinsed
    3/4 c. chopped fresh cilantro
    roma tomatoes, chopped, (opt.)
    1 t. coriander
    1 heaping t. ground cumin
    1/4 t. cayenne pepper
    Salt and pepper to taste

Tips

The original recipe didn't call for tomatoes, but photo accompanying the recipe showed them. Great for color and anti-o's! I never add salt and pepper to the whole pan.


Directions

In a medium saucepan, heat olive oil, saute onions and garlic until transluscent and/or lightly browned. Mix quinoa into the saucepan and cover with broth. Season with cumin, coriander and cayenne pepper. Bring mixture to a boil. Cover, reduce heat, and simmer 20 min. Stir the corn into the saucepan, and continue to simmer about 5 min. until heated through. Mix in the black beans and cilantro.

Serving Size: majes 6 or more 1 c. servings.
