Ingredients

    1 T Avacado Oil
    1.5 C Fresh Onion
    4 Large Carrots
    4 Large Stalks Celery
    1 Clove Garlic
    2-3 Roma Tomatoes
    Salt
    Pepper
    4 C Simple Truth Organic Chicken Broth
    1 Can Cannellini Beans
    1C Fresh Spinach chopped
    4 T Raw Cilantro

Directions

Dice onion, carrots, celery, garlic and tomatoes small. Add avocado oil to pot. Once avocado oil is hot add diced veggies and saute until cooked down a bit but still firm. Add the can of cannellini beans and chopped spinach and simmer for about 5 min. Add cilantro and serve.

Serving Size: Makes about 9 1-cup servings
