Ingredients

    DRESSING INGREDIENTS:

    - 1/4 Cup fat-free, plain Greek Yogurt

    - 1 TBSP. olive oil

    - 1 TBSP. balsamic vinegar

    - 1/2 TBSP. honey

    - 1 tsp. salt

    - 1/4 tsp. pepper

    SALAD INGREDIENTS:

    - 1/2 Cup cooked edamame

    - 2 Cups broccoli florets

    - 1/2 Cup cherry tomatoes, halved

    - 1/2 Cup cucumber slices, halved

    - 1/2 Cup shredded carrots

    - 1/4 Cup pine nuts

    - 3 mason jars

Directions

- Bring a pot of salted water to a boil, and add broccoli florets. Boil for about 7 minutes.

- While broccoli is boiling, prepare salad dressing (maybe microwave edamame if needed).

- Drain broccoli, rinse under cold water, and set aside.

- Take 3 mason jars, and evenly dispense dressing into the bottom of each.

- Evenly dispense remaining ingredients in the following order:

Broccoli, cucumber, carrots, tomato, edamame, pine nuts.

- Seal each mason jar and refrigerate. When ready to eat, shake each jar so dressing coats evenly, and enjoy!
