Ingredients

    2.5 C. veggie burger crumbles
    1 C brown rice
    1 1/2 tsp. butter
    2.5 Tblsp. light margarine
    1/2 C. chopped green pepper
    1 C. green onion chopped
    4 cloves garlic
    salt
    chili powder or chipotle pepper
    black pepper
    1/4 C. lemon juice
    1/4 C. lime juice
    2 Tblsp. sour cream... reduced is okay too
    4 Tblsp. parmasean cheese
    cilantro
    parsley

Directions

In hot skillet melt butter & margarine. Add choppped onion; green pepper; garlic and sautee until green pepper is bright in color then add cilantro and parsley. Stir in lemon juice and veggie burger crumbles. Stir in lemon juice add salt, pepper, chili powder or chipotle pepper to taste. Add 1 tblsp. taco seasoning (if desired). Add 1 C. brown rice and 1/2 C. water. Stir all together. Turn heat to low and let cook covered for 8 minutes. Add sour cream and parmasean cheese (or whatever kind of cheese you prefer) let cool for a few minutes and enjoy with a nice salad; guacamole and chips.
