Ingredients

1 medium sized head red cabbage, sliced thinly
2 gala apples, chopped finely
2 slices low sodium bacon
1 medium onion, chopped
1 quart water
1/2 c. apple cider vinegar
1/2 c. combination stevia, coconut palm sugar & Erythritol, equal parts
1/8 c. brown sugar or brown sugar substitute
(Or you can use stevia or other preferred sweetener)
1/2 tsp. salt
1/4 tsp. black pepper
4 whole cloves
1 bay leaf
2 TB gluten free flour
Tips
Servings will vary depending on size of cabbage and apples.
Directions
cut bacon into small pieces. Place in large dutch oven and brown lightly. Add chopped onion and apples, sauteing until slightly tender. Add cabbage, water, vinegar, sugar, salt, pepper and spices. Stir. Bring to a boil. Cover and simmer for about 45 minutes or until tender. Just before servings, sprinkle with flour and stir to absorb liquid.
