Ingredients

    Salad
    • 2 large handfuls spinach
    • ¼ head iceberg lettuce, chopped
    • 3 chicken breasts, boiled and cut into pieces
    • 1/2 cup pecan halves, roasted
    • 1 small crate of strawberries, hulled and sliced
    • ¼ cup blueberries
    • ¼ cup blackberries
    • ground pepper to taste
    • kosher salt to taste

    Sweet Almond Dressing
    • ½ cup roasted almond oil (see tips)
    • 2 tablespoons (or 1/8 cup) balsamic vinegar
    • 2 tablespoons (or 1/8 cup) Japanese vinegar
    • 2 tablespoon date syrup or honey (see tips)

Tips

Date syrup can be purchased on Vitacost or Amazon. The Date Lady brand is what I use. Roasted almond oil can be purchased at Vitacost or Amazon.


Directions

In a large bowl, combine spinach, lettuce and chicken. Add pecans, strawberries, blueberries and blackberries.

For dressing, whisk together all the ingredients until thick and well combined. Toss into salad. Season with salt and ground pepper to taste.
