Ingredients

    6 xtra small bell peppers (not mini)
    1 c. chopped kale
    8 oz turkey breakfast sausage
    1/4 c. diced onions
    3 large egg whites
    1 large egg
    1 1/2 slices swiss cheese

Tips

1. make sure to choose peppers that stand up on their own
2. fold the swiss in half then in half again to get even portions of cheese to top each pepper with


Directions

1. Brown sausage in pan, adding diced onions during the last few minutes.
2. Cut tops and membranes out of peppers
3. Mix eggs, whites, kale, and meat mixture together and fill the peppers.
4. Bake in 400 oven for 25-30 min.
5. Remove from oven and top with swiss
