Ingredients

4 Cups fresh Spinach, stemmed and chopped
8 oz. Mushrooms, sliced
1 small onion, chopped
1 T. butter
1 can evaporated milk, 2%
salt and pepper to taste
1/4 t. thyme
4 large eggs
1/4 c. Goat Cheese crumbles
1 pie crust
Directions
Preheat oven to 350*
Place crust in a 9" pie pan.
Melt butter in a large sauté pan over med high heat.. Add mushrooms and onion. Cook until mushrooms release juices and onion is softened and fragrant. Add Spinach and cook until wilted. Remove from heat and let cool.
Whisk together milk, spices and eggs.
Place vegetables in the pie crust. Sprinkle with Goat Cheese. Pour milk mixture over all and bake for 45 minutes or until a knife inserted comes out clean
