Ingredients

    2 8oz packages light cream cheese at room temp
    2 TBS granulated sugar
    1 tsp Vanilla Extract
    zest of 1 lemon
    juice of 1 lemon

    1 and 1/2 cups Heavy Whipping Cream
    1/4 cup Granulated Sugar

    1 and 1/2 cups graham cracker crumbs
    1/4 cup Granulated Sugar
    2 TBS unsweetened cocoa powder
    1/3 cup melted Butter
    2 cups fresh Raspberries
    2 cups fresh Strawberries (halved if large)
    2 cups fresh Blueberries (or defrosted and drained if frozen)

Tips

Serves 12 pieces
Could whip up extra cream and pipe "stars" with icing tube between the berry rows if you wanted. I did not do it this time.


Directions

Mix graham crumbs with granulated sugar and cocoa powder. Add melted butter and mix well. Press into 10 x 7 inch dish (or 9 x 9 would work). Press firmly, then place in refrigerator to firm up.
Mix whipping cream and 1/4 cup sugar til firm, but do not overbeat it to make "butter" and set aside. In a separate bowl, you do not have to wash those beaters, beat the cream cheese with the 3 TBS sugar, lemon juice, lemon zest and vanilla extract
Meanwhile Beat cream cheese with lemon juice, lemon zest and vanilla til fluffy. Then gently, but thoroughly with a whisk incorporate the whipped cream. Spoon onto the cooled crust. Smooth and let chill for several hours. About an hour before serving, Arrange berries in stripes (or make a flag if you want), leaving some of the white cream cheese to show through.
