Ingredients

    Dressing
    1/4 cup Lime Juice
    2 1/2 teaspoon Fish Sauce
    1 1/2 Tablespoon Extra Virgin Olive Oil
    1 Tablespoon Sugar
    1/4 Teaspoon Crushed Red Pepper (or to taste)
    Salad
    1 Cup (dry) Quinoa
    1 medium Red Bell Pepper - chopped
    1 medium Carrot - diced
    1/2 English Cucumber - seeded and chopped
    2 Scallions - chopped
    1/4 cup fresh Cilantro - chopped
    2 Tablespoon Mint or Basil (optional)

Directions

In a small bowl, whisk the dressing ingredients together, set aside.
Bring the quinoa to a boil with 2 cups water and 1/2 teaspoon of salt. Turn to simmer and cover for about 15 minutes or until the water is almost absorbed. Turn heat off and let sit for 5 minutes. Transfer to a bowl and allow to cool completely.
While quinoa is cooling, chop all vegetables. Add vegetables, herbs and dressing to quinoa. Toss and enjoy!
