Ingredients

    2 T Grapeseed Oil
    2 small onions, chopped
    1 t garlic, chopped
    32 oz chicken stock
    1 lb dry white beans, rinsed
    1 smoked turkey leg (about 1 lb)
    5 cups water, and maybe more
    1 cup chopped carrots
    1 cup chopped celery
    1 bunch swiss chard, chopped

Tips

I often add my carrots and celery later as bigger chunks, but you might prefer to add them with the onions and garlic as a mirepoix. Also you can substitute ham for the smoked turkey if you like it better.


Directions

Heat oil in large soup pot. Add onions and garlic and saute for 2 minutes. Add chicken stock, turkey leg and dry beans with 5 cups of water. Bring to boil, then lower heat and simmer about 2 hours. Check during cooking in case you need to add water. After an hour, add carrots and celery. After 1.5 hours, add the chard.

Serving Size: About 8 bowls.
