Ingredients

    1 tablespoon olive oil
    1 half onion, peeled and diced
    1 clove garlic, peeled and diced
    2 small potatoes, peeled and diced
    2 carrots, peeled and diced
    4 celery stalks, diced
    3 cups vegetable broth
    salt and pepper to taste
    1/2 teaspoon thyme

Tips

Use any vegetables you have on hand to make this soup. This is a basic soup. Change the flavor by changing the seasonings. (Obviously changes will alter the nutrition information)


Directions

Saute the onions and garlic in the olive oil until softened and starting to change color
Add the celery and carrots. Cook a few minutes.
Add the potatoes, seasonings and vegetable broth.
Cook until all the vegetables are tender.
Use an immersion blender to puree the soup to a nice texture.
