Ingredients

    3/4 cup almond flour
    3/4 cups gluten free flour
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp kosher salt
    1 large egg
    1/2 cup butter, softened
    1/3 cup granulated sugar
    1/3 cup brown sugar
    1/2 cups natural peanut butter (no sugar added)
    2 tsp vanilla extract

Directions

1. Preheat oven to 350 F degrees. Grease cookie sheets or use silicon mats.
2. Combine all dry ingredients and mix thoroughly in a separate bowl.
3. Cream butter and sugars together.
4. Add peanut butter and vanilla to creamed butter. Mix well.
5. Add egg and beat well.
6. Add dry ingredients to wet and mix until semi-firm dough forms.
7. Use a small cookie scoop to portion out dough onto prepared cookie sheet.
8. Bake for 12-15 minutes until light golden brown.
9. Allow to rest on cookie sheet for 1-2 minutes, then transfer to cooling racks.
