Ingredients

    200g whole grain spelt (or wheat) flour
    10g, 1tb linseeds
    2tsp baking powder
    2 tsp dark brown sugar ( or leave out)
    35 g butter
    40g sharp cheese, grated
    140ml milk (or perhaps a little less)

Tips

The reusable silicon baking sheets make these simple to cook without extra oiling and no sticking.
This recipe can be varied a lot, you could substitute fruit for cheese, add different seeds or leave out. I'm undecided about the sugar, I think maybe it's not necessary.


Directions

Put flour, linseed, baking powder in bowl and mix together. Put in 2 tsp of Barbados sugar ( optional), cut in the butter and mix with fingertips to fine crumb, as if you were making pastry. Grate the cheese and lightly mix in so you have a uniform looking mixture. Add about 3/4 of the milk and mix with a spoon, if it looks dry, add more, up to the full 140mls. If by chance the mix is too wet, a little extra flour will sort it out. Divide into walnut sized balls, both times I've made this I got 21 balls. Roll each of these into a little stick, about 15 cm long. Bake at 200°c for 15 minutes, if using two trays, rotate half way.
