Ingredients

    2 cups broccoli, chopped
    approx. 2 cups 1% milk
    4 cups vegetable stock
    3 T. margarine, low fat
    3 T. flour
    1 cup shredded cheddar, low fat
    1tsp. Vegetta or Mrs. Dash salt substitute

Directions

steam brocolli in microwave for approximately 3 minutes.
In large pot, melt margarine over med. heat
Incorporate flour with wooden spoon to form a ball.
Season
Add brocolli and vegetable stock & stir with wire wisk until flour mixture is disolved.
Simmer until soup begins to thicken.
Slowly add milk until desired thickness is achieved.
Remove from heat and stir in cheese.
Alternatively, cheese can be used to top individual bowls on serving.

    My husband and I both loved it. We are both diabetic and he has a heart problem..It is lower fat and delicious. HE SAYS IT is Better than Panera Bread's broccoli soup and less expensive and I love it because it is so easy to make and delicious. - 1/26/09

    This soup was very tasty, but I found I liked the consistency better after a quick run through the food processor. It just wasn't thickening up. - 6/23/08

    This is really good and low in fat, calories, and carbs! This is a girls dream! I added just a little bit of spice to it (because I love spicy food) and it came out well. I will eat this over and over again. - 5/22/08

    well the sodium is EXTREMELY high!!!! Not as bad as Panera's sodium, but TOO high in sodium to be made at home. Could choose a lower sodium broth - 4/12/11

    This was good, however, according to the recipe unfortunately, only 1/2 a cup is a serving size. 1 Cup is still under 200 calories. :) I, agree with other reviewer, sodium is high, I used low sodium broth and skipped salt seasoning and used onion powder for flavor. - 3/19/13

    I made this with all the veggies I used to make stock, as they were all good. It also ended up a little thin, so I added another 1/2 cup of flour to thicken it a bit. But it really was delicious, restaurant quality! - 3/13/11

    Easy and tasty! I used 1/2% lowfat milk, Bridgeport seasoning,1 tsp horseradish sauce and a few dashes of Red hot pepper sauce in lieu of Vegetta only because these were available without going out to buy anything. I will definitely make it again. Thank you! - 2/20/10

    I added bacon, 1/2 red pepper and 1/4 onion. I also used Zatarans seasoning, salt&pepper instead of the seasoning suggested. I used 1 cup milk and 1.5 cups cheese. It was delicious and VERY filling, I plan to make this again - 10/2/11
