Number of Servings: 1

Ingredients

    Add chicken and carrots to stock for 8 minutes
    Add bok choy and scallions, 3 cups water,
    spincach and mushrooms for 4 minutes
    let simmer on low until everything is cooked to your liking. Turn heat off and stir in miso (never let miso boil).

    Add a bit of sesame oil and some sesame seeds to top and you have a good, filling lunch for P3!

Tips

Cut the baby carrots in half...too small and you won't get the crunchy mouth feel that I like to have while really eating something! You can also omit the chicken and poach 3 eggs in this...super yummy!
