Introduction
Traditional Japanese style. Traditional Japanese style.Number of Servings: 1
Ingredients
-
2 oz bundle of noodles (roughly one packaged bundle)
8 T tsuyu or 3T Memmi diluted
1 stalk of green onion sliced thinly
optional 1/4 sheet of nori cut into thin strips
optional a little grated fresh ginger
Tips
This large bowl is, according to the package, two servings, but I normally eat the whole bowl.
Directions
Bring small pot of water to boil, add noodles, and cook for around 5 minutes until soft. Let sit 3 minutes to finish cooking. Drain into a colander and then wash under running water until cool. Swish it around with your hand to remove some of the starches.
You can eat it by straining it on a zaru (bamboo colandar plate) and dipping the noodle into undiluted tsuyu or slightly diluted Memmi, or serve in a bowl with diluted broth. The broth can be cold or hot. Typically, the zaru soba is cold, and soba in a bowl is hot.
In both cases, add the onion and ginger to the broth. Add the nori to the noodles.
