Ingredients

2 and 1/2 cups almond flour
1TBSP coconut flour
1/4 tsp salt
1/2 tsp baking soda
1TBSP vanilla extract
1/4 cup coconut oil
1/4 cup pure maple syrup
1/8 cup canned lite coconut milk*
1/8 cup water
2 eggs
1 cup fresh or frozen blueberries
2 TBSP ground cinnamon
*if using thinner coconut milk from a carton! omit water and increase coconut milk to 1/4 C
Tips
You could sprinkle additional cinnamon on the tops.
Please see note in ingredient list regarding the coconut milk.
Directions
Preheat oven to 350*
In a mixing bowl, combine the flours, salt, baking soda, vanilla, eggs, and coconut oil.
Add the maple syrup. Coconut milk, water, and cinnamon.
Fold in blueberries.
Spray or line muffin tins, and bake 12 glorious Paleo blueberry muffins for 20 to 25 minutes!
