Ingredients

    coconut oil
    pork loin
    sea salt, pepper
    1 yellow onion
    garlic
    tomato sauce
    apricot preserves

    spices; cinnamon, nutmeg, ginger
    rosemary sprig as garnish

Directions

heat coconut oil, onions- season pork with salt and pepper, sear in skillet,. Place meat and onions in slow cooker. In same skillet, saute garlic, tomato, spices, preserves. whisk together. Pour over pork. Cook for 8 hours.
