Ingredients

    Vital wheat gluten flour, 10 oz
    Nutritional Yeast, Vegetarian Support Formula 4 tbsp
    oregano, ground, 1 tsp
    sea salt, 1 tsp
    Sam Adams Old Fezziwig, 12 oz
    onion, red
    cumin, .5 tbsp
    turmeric, .5 tsp
    ground cloves, .25 tsp
    pepper, black, 1 tsp
    olive oil, 1 tbsp

Tips

Makes about 25 ounces. This'll go well on any bread of high character you'd like to serve it with, or chunked up in a stir-fry.


Directions

Assemble all ingredients; in a food processor, pulse the onion until it's in big chunks. Add all spices, nutritional yeast and olive oil. Pulse until fairly well-mixed. Add vital wheat gluten and one whole bottle (12oz) of dark beer or ale. Process on high until fairly homogeneous.
Wrap LOOSELY in a double wrapping of parchment and tie, WELL. Remember that there's fresh beer in this recipe: the carbonation is going to want to escape. Steam for 45 minutes. If, in fact, you DO suffer a blowout, don't sweat it; it's all going to cook off real well when you take it out of the steamer and finish it in the oven at 350deg for fifteen more minutes. Cool, slice and serve on your favorite sandwich.
