Ingredients

    1 bone-in or boneless skinless chicken thigh (I like bone-in) Free Range and/or Organic if you can manage - you'll truly taste the difference!

    dash of salt

    freshly ground pepper to taste

    dash of onion powder

    dash of THYME (Spark didn't have a 'dash' of thyme)

    NOTE (recipe is only calculated for 1 thigh, so adjust seasoning for more if you're making more)

Tips

Let ALL meat rest so it continues cooking the last tiny bit and re-distributes the juices.
Leftovers are GREAT in chicken salad, quesadillas, a protein-packed and tasty snack when dipped in a light ranch or barbecue sauce or paired with apples as a snack...whatever you can dream of! :)


Directions

Preheat over to 400, adjust rack to middle of oven
Rinse chicken thighs and pat dry (I do 4 at a time)
Put chicken into a baking pan, meaty side up (bone on bottom)
Sprinkle with spices
Bake in oven for 15 min.
Flip and re-season with a bit more of the thyme and onion powder (no need for more salt or pepper).
Bake for about 3 minutes more.
Let rest for 2-3 minutes
Enjoy!

    Since I was cooking rice in the oven at 375, I baked the chicken for 20 min, flipped and seasoned, then back in the oven 10 min. - 10/22/16
