Ingredients

    13 oz Chicken Tenderloins, cut into bite sized pieces
    5 oz Baby corn, canned
    1/2 cup water chestnuts,c anned
    1/2 cup straw mushrooms, canned
    1 cup bean sprouts
    2 TBSP flour
    (next time i'm gonna add pineapple)

    Sauce:
    1/3 cup rice vinegar
    1 TBSP ketchup
    4 TBSP splenda
    1/2 TBSP soy sauce
    2 tsp corn starch
    4 tsp water (next time i'm gonna use pineapple juice)

Directions

1. Place the chicken in the bag with flour and some salt if desired, and shake until coated.
2. Stir fry the chicken with cooking spray until no longer pink.
3. Meanwhile prepare the sauce: Bring the vinegar, ketchup, soy sauce and splenda to a boil.
4. Mix the corn starch and water (or pineapple juice) until mixed, then add to boiling mixture. Stir to thicken.
5. Add the vegetables to the chicken and heat.
6. Pour the sauce over the chicken mixture and stir to coat.

Serve immediately.
