Ingredients

    Flour mixture (1 1/2 cups almond meal, 1/2 cup ground flax, 2 tablespoons coconut flour)
    1 cup splenda or Xilitol
    3/4 cup low sugar orange juice
    2 cups shredded zuchini
    2 eggs
    1/2 stick unsalted butter softened
    1 tsp. baking soda
    1 1/2 tsp. cinnamon
    1/4 tsp. all spice
    1 tsp. salt
    1/2 cup chopped walnuts

Directions

cream splenda, butter until creamy, add eggs and all other ingredients. Shred zuchini and add to mixture, also add 1 tsp. salt. Pour in bread pan and bake at 350 until done.
