Ingredients

    1/2 spaghetti sauce recipe*, about 5 cups
    110 g grated skim mozzarella cheese
    50 g grated marble cheese (lower fat)
    No-cook lasagna noodles, about 8 pieces
    Frozen cut-leaf spinach, 8 nuggets or 170g
    2 Tbsp reduced-fat Parmesan cheese

Tips

Grate then measure cheeses before assembling.
I freeze portions in waxed paper for a quick homemade lunch or supper.


Directions

Prepare sauce; grate cheeses; thaw and drain spinach.
Layer bottom up: sauce, cheese, noodles, ending with cheese then sprinkle with parmesan. Put spinach in one single layer around the second or third layer.
Bake 375 about 40-60 minutes, covered loosely with foil first 30 minutes. Done when pasta is fork-tender.
I used half of my beef spaghetti sauce recipe with a little extra water for the noodles.
