Introduction

I hate mayonnaise. These are nice sweet-and-sour deviled eggs with just a little kick from the Wickles. They also have some texture to them from the pickles and mustard. I hate mayonnaise. Ingredients

    12 Hard-boiled eggs, sliced in half lengthwise and the yolks removed and saved
    2 Tbsp. sour cream (Nutrition info assumes full-fat cream)
    12 (or so) Wickle pickles, finely chopped
    2 Tbsp. Inglehoffer Stone-Ground mustard (or similar whole-grain mustard)
    Black pepper to taste
    Paprika (optional)

    Note: Really, all flavoring ingredients are to your taste.

Tips

You can pre-mash the egg yolks, and it makes them easier to combine with the other ingredients. If you prefer a smooth texture to the filling, use Wickle juice and plain Dijon mustard.


Directions

Stir together egg yolks, sour cream, pickles, mustard, and pepper in a small bowl until creamy and yolk-lump free. Spoon or pipe yolk mixture to fill the hollows of the hard-boiled eggs. Sprinkle lightly with paprika.

Serving Size: Makes 24 deviled eggs (egg halves)
