Introduction

Number of Servings: 6

Ingredients

    One package vegetarian ground beef (I used Smart Ground).

    Two large eggs.

    2 slices toasted bread (I used an onion hamburger bun), chopped into cubes.

    3/4 cup saute'd onion.

    For taste: Worchestershire sauce, salt, pepper, garlic powder.

    3 tablespoons (estimate) of ketchup and a few slices of cheese, to top. (Optional).

Tips

After it's done baking, if you put it under the broiler for a couple of minutes, the cheese will get crispy. Makes fantastic leftovers (my favorite is to mold the rest into hamburger patties and fry them).


Directions

Mix together all but the ketchup and cheese in a medium bowl. Press into a loaf pan (I used an 8x8 cake pan and did a single layer meatloaf). Top with ketchup and cheese, if desired. Bake at 400 for about ten minutes.
