Introduction

Ingredients



    Organic Baby Spinach (Taylor Farms), 2 cup
    Mushrooms, canned, 2 cup
    Onions, raw, 1 medium (2-1/2" dia)
    Basil, 2 tbsp
    Hellman's Canola Cholesterol Free Mayonnaise, 3 tbsp
    Olive Oil, 2 tbsp
    Red Ripe Tomatoes, 3 cup, chopped or sliced
    Garlic, 4 tsp
    Swiss Cheese, 8 slice (1 oz)
    Phyllo Dough, 8 oz

Directions

1. preheat oven to 350
2. Slice onions then cut into moon shapes.
3. grill with garlic and olive oil till browned
4. drain mushrooms and add to pan, cook for 2-3 more minutes.
5. Add spinach and cook till wilted.
6. Add mayo and any additional spices you would like.
7. seperate phyllo dough into 2 equal amounts and place in pie dishes (2 dishes).
8. Pour 1/2 of pan mixture into phyllo
9. Top with basil, tomatoes, and cheese.
10. Use the phyllo dough that is going over the sides and tuck on top (it should also cover the whole top.
11. Bake for 10-20 minutes till phyllo is golden.

Serving Size: makes 16 small servings or 8 big servings
