Ingredients

    2 6-oz. boneless, skinless chicken breasts, cut in half
    1/2 tsp. red or cayenne pepper
    1/4 tsp. black pepper
    1/4 tsp. sea salt
    1/2 tsp. onion powder
    1/2 tsp. garlic powder
    1 cup lowfat buttermilk
    1/4 cup Fiber One Original Cereal, ground into crumbs
    1/4 cup plain bread crumbs
    1/4 cup grated Parmesan cheese

Directions

Blend peppers, salt, and onion and garlic powders together. Rub into chicken breasts. Place chicken in bowl and cover with buttermilk. (Holes may be poked in chicken first if desired.) Marinate in refrigerator for one hour or overnight.

Mix cereal, bread crumbs, and Parmesan in a clean bowl large enough for chicken. Drain buttermilk from bowl with chicken. Take each piece separately and roll it in the cheese and crumb mixture. Place coated chicken on a baking pan and bake at 375 degrees for 30 minutes or until done.
