Introduction

This recipe reads a bit high on the sodium. It would come down by a bit if you rinse those canned beans thoroughly. (I do, but I didn't know how to account for this on the nutrition label. Ingredients



    Frozen boneless, skinless chicken breast, 32 oz

    Beans, white, (Rinsed) 3 cups

    Hunt's Fire Roasted Diced Tomato, 1 cup

    *Campbell's low sodium chicken broth, 2 cups

    1 medium chopped Fresh Sweet Onion

    kale, raw, 2 cups chopped

Tips

A wonderful fall or winter meal that would be lovely served with some warm crusty whole grain bread and a side salad.


Directions

Spray crock pot with cooking spray.
Chop and place onions in crock pot.
Add chicken breasts (still frozen)
Chop and add kale.
Add Fire Roasted Tomatoes and cook for about 6-8 hrs.
Season with black pepper as needed.

Serving Size: Makes 8 equal servings
