Ingredients

2 cups of almond meal
2 cups of chopped zucchini
1/2 cup of coconut oil
1 cup of cocoa
1/2 cup of xylitol
1/2 cup of maple syrup - you could use all maple syrup or all xylitol up to you
4 eggs
1.5 tspns of baking soda
Directions
Chop zucchini and blitz with almond meal in processor until smooth. Add rest of ingredients and blitz till smooth.
Pour into medium sized cupcake papers or into a medium sized cake tin.
Cook on 160c for 30-40 minutes. Test with skewer that it comes out clean.
