Ingredients

    1 can each (drained):
    - Pinto beans
    - Kidney beans
    - Black beans
    - Hot chili or cannellini beans

    1 can sweet corn, drained
    1 can diced tomatoes, with juice
    1 can tomato paste

    4 cups vegetable broth
    2 cups chopped raw carrots
    2 cups chopped celery
    1 medium sweet onion, chopped
    1-2 bell peppers, chopped

    Chili seasonings - I like to use a mix of:
    - Chili powder
    - Cayenne powder
    - Rubbed sage
    - Marjoram
    - Oregano
    - Garlic powder
    - Chipotle powder
    - Fresh cracked pepper
    - Salt as needed

Tips

- Freezes extremely well
- Perfect for a crowd with little prep
- Cheaper than meat based chilis
- Cook on high for 6 hours, if pressed for time.


Directions

1. Chop all vegetables as directed.

2. Pour all ingredients into your crockpot and mix thoroughly.

3. Cook on low for 10 hours to develop the best flavor
