Ingredients

    4 hard boiled large eggs
    4 slices of very thin bread
    2 tablespoons of real mayonnaise
    2 tablespoons of minced fresh chives
    salt to taste

Tips

Make ahead of time, cover with a slightly damp towel, and store in the refrigerator.


Directions

Place eggs in pot filled with cold water. Bring to a gentle boil, turn down to a slow simmer, cover and cook for eight minutes. Rinse with cold water and let cool completely in refrigerator. Peel cool eggs under running water over a mesh colander. Pat dry with paper towels.

Chop eggs and chives finely. Place in small bowl. Add mayonnaise and salt. Combine.

Spread on two slices of bread. Place other slices on top. Stack sandwiches on top of each other. With a bread knife, slice off crusts. Cut sandwiches diagonally. Place them on a plate with the long cut side down so they are upright triangles.
