Ingredients

    Canned whole tomatoes
    Lentils cooked in fish stock
    1/2 medium yellow onion
    2 servings of white fish
    1 tbsp extra virgin olive oil

Tips

Add seasonings of choice as you go. Adding a seasoning directly to the onion fish mixture really improves the overall taste. Serve with a poached egg and bread, such as naan.


Directions

Cook lentils in own pot with a fish stock cube.
In larger pot saute onion in 1 tbsp of olive oil, add fish that has been cut into bite sizes pieces. Cook fish till halfway done then pour in two cans of whole tomatoes. Cook mixture covered over medium heat for about 20 minutes. Mash up whole tomato pieces then add lentils. Let cook over medium-low heat for 10 minutes then remove lid and cook over low heat for another 15 minutes. Let sit with lid off of heat until ready to serve.

Serving Size: 4 dinner servings (1.5cups) or 8 appetizer servings.
