Ingredients

    Topping:
    6 T vegan margarine
    1 C brown sugar
    1/2 t ginger
    1/4 t allspice
    Place in pan:
    8 slices pineapple
    8 Maraschino cherries
    Cake mix:
    2 T flax seed
    .33 C of hot water
    .33 C Applesauce
    1.5 C vegan milk
    1 t vanilla
    3 cup white flour
    1 C sugar
    1/2 t salt
    1/2 t Cinnamon
    4 1/2 t baking soda

Tips

Can easily cut in half


Directions

Preheat oven to 375
1) Mix the brown sugar, margarine, ginger and allspice in sauce pan. Let melt.
2) Spray cake pan with cooking spray.
3) Line the bottom of the cake pan with pineapples and place cherries in center
4) mix the cake mix ingredients together
5) pour the topping mix on top of the pineapples and cherries.
6) pour cake batter over the pineapple and cherries sugar mixture
7) Bake at 375 for 35 minutes
Let cool for a few minutes and invert on plate.
