Ingredients

1/2 cup Kellogg's Special K Cereal, crushed (with rolling pin or in food processor)
2 boneless, skinless chicken breasts (about 4 oz. each)
1 tsp. Dried Oregano
1 tsp. Garlic powder
1 tsp. Salt (or more to taste)
1 tsp. Black Pepper (more or less to taste)
1 tbsp. I Can't Believe It's Not Butter Light Spread (melted)
1/2 tbsp. Parmesan Cheese
2 tbsp. Light Mayo
Cooking spray (regular or butter flavored)
Tips
If you like you can add other spices to your spice mixture to modify the flavor, such as thyme, basil, or rosemary.
Directions
1. Preheat oven to 375.
2. Combine all spices (oregano, garlic powder, salt, black pepper) and parmesan in a plastic bag. Mix well. Place one or two fresh/thawed breasts in bag and shake till well coated.
3. In a bowl, mix light mayo and butter spread (melted) with a fork or whisk. Spread crushed Special K on a plate. Dip chicken (both sides) in mayo/butter mixture, then coat both sides with cereal. Place chicken on baking sheet sprayed with regular or butter flavored cooking spray.
4. Bake for 35 to 45 minutes, till brown and cooked through. Do not cover or turn while cooking.
5. When done, take out of the oven and allow chicken to cool for 10 minutes prior to serving.
Serving Size: Makes 2 servings, 1 breast per serving.
