Introduction

This is best with Chilean Sea Bass but very expensive. In a pinch any thicker cut less dense fish will do like halibut. In this recipe I am substituting cod which is what the calculations are for. Ingredients

    Cod (fish), 24 oz(1 1/2 lbs)
    Diced Tomatoes, 1 can (14 oz) with chile's or Mexican style if available
    Onions, raw, 1 medium diced
    Garlic, 2 clove minced
    Chicken Broth, 1/2 cup (4 oz)
    *Spanish Olives w/pimento - 10 quartered
    Almonds - sliced, 1 tbsp toasted

Directions

Heat onion and garlic in large skillet about 5 minutes. Stir in tomatoes, broth and olives and heat until simmering. Cut fish into 4 portions and arrange in skillet. Cover and cook until fish flakes with a fork, about 8-10 minutes. Place fish on plate and cover with braise then sprinkle with almonds. Serve with some long grain brown rice and a fresh green vegetable.

Serving Size: Makes 4 servings with approximately 6 oz of fish
