Introduction

Use acorn squash as "sauce" Use acorn squash as "sauce"
Number of Servings: 4

Ingredients

    1 acorn squash
    1 zuchini- sliced into straws
    6 ounces of penne pasta
    2 pats of butter
    3 slices of turkey bacon
    1 small onion chopped

Directions

First bake acorn squash for 1-2 hours after slicing in half (do ahead and let cool for 2-4 or longer)
30 minutes before serving time:
carmelize onions and bacon in med heat pan
while browning, heat water for pasta
Now use 1/2 a pat of butter on onions and bacon and slowly add squash to pan, once you fold onions in and get a nice sear on the squash mixture add red of butter and then add zuchini straws, fold in as well and then cover for few minutes until zuchini is slightly wilted. Once pasta is done, drain and add to pan. Season to taste. I use black pepper and salt.
