Stuffed Delicata Squash

2 Delicata Squash cut into quarters and seeded
One zucchini diced
3 small tomatoes diced
half a large onion diced
two garlic cloves
1/4c qunioa - cook before adding to recipe
2 slices bacon diced
3oz fresh mozarella
Leave bacon and cheese off to make this vegan or vegetarian. Mixing in kale or other greens (or any seasonal veggie), and subbing out different grains should be fine. This would be a great way to use leftover rice or other grains.
Serving Size: 1/2 of a squash (2 pieces)
