Introduction

Number of Servings: 4

Ingredients

    1 cup dry quinoa, cooked according to package directions
    1 package Trader Joe's Baked Tofu, savory flavor (or homemade tofu from your farmers market, which I am luck to have!)
    1 Tbsp olive oil
    1/4 cup fresh basil (with or without flowers)
    1 Tbsp rice wine vinegar or lemon juice
    1/2 pint grape or cherry tomatoes
    salt to taste
    balsamic glaze (optional)

Tips

The longer the salad sits before you eat, the stronger the flavors will be.


Directions

Cook quinoa according to package directions. Cube or crumble tofu into bowl, add tomatoes whole or chop as desired, combine with remaining ingredients. Salt to taste. Drizzle with balsamic glaze. (optional) Serve immediately or chill.

Serving Size: 4-6 servings, depending on whether you will use it as a meal or a side dish.
