Ingredients

    1 cup chopped carrots
    1 stalk celery, chopped
    1 med red onion, chopped
    1 tbs olive oil
    box of Lightlife Smart Ground, Mexican style

    1 can black beans
    1 can pinto beans
    1 can kidney beans
    1 can tomato sauce (I use Muir Glen)
    1 can diced tomatoes (Muir Glen)
    1 cup water

    1 tsp garlic powder
    1 tsp chipotle chili powder
    Salt to taste

Directions

Warm olive oil over medium high heat; saute carrots, celery, and onion. When soft, add veggie crumbles and stir to combine.

Add beans, tomatoes, and water, combine. Add spices and bring to a boil. Reduce to simmer for 10-15 minutes, as desired.
