Introduction

Delicious and Easy! It's super filling with lots of protein and fiber, and satisifies your need for cruncy, melty, chewy, cheesy.... instead of going to Taco Bell... Ingredients

    1 Kangaroo Pita Pocket (Looks like a pita cut in half and hollowed out)
    5-6 Tyson Southwestern Chicken Strips
    1/4 Cup of Kraft Cheese Mexican Blend (2% Milk) (or Fat-Free if you prefer that, but I think fat-free cheese taste funny)
    1/2 Cup of Shredded Lettuce
    2 Tbsp Light Ranch Dressing
    1/2 Cup Fat-Free Refried Beans
    2 Tbsp Picante Sauce

Directions

The Southwestern Chicken Pita Pocket....

Preheat any stove top grill (I like my George Foreman) or heat up a greased pan on medium heat on the stove top.

1. Spread out the cheese on the inside of the pita pocket.
2. Drizzle the inside of the pita pocket with the ranch dressing.
3. Add the chicken strips to the inside of the pita pocket.
4. Grill the pita pocket for 3-4 minutes or until nice and toasty. (Just like grilling a grilled cheese sandwich)
5. Remove the pita pocket from the source of heat and let it cool down for about a minute.
6. Stuff the pita with the lettuce.
7. Turn off the stove/grill.

Next... The Refried Beans...
1. Heat up in the microwave for about 40 seconds.
2. Top with picante sauce if you like it hot!

Now you have a nice Southwestern meal to keep you warm and full throughout the day... until dinner anyway. : )
