Ingredients

    Coconut Oil Cooking Spray
    8 cups homemade chicken soup stock
    13 oz. Smoked Turkey Sausage
    4 oz. chopped leftover rotisserie chicken breast
    1 Tsp. minced garlic
    1 small onion, diced
    2 stalks of celery, diced
    2 medium roma tomatoes, diced
    2 cups zucchini noodles (made using 2 small zucchini with a spiralizer)
    1 Tbsp. ground thyme
    1 Tbsp. ground oregano

Tips

I didn't add salt to this recipe because my homemade chicken stock is salty enough. If your stock isn't very flavorful, I would add at least 1-2 Tbsp. of salt to this recipe.


Directions

Cook the turkey sausage according to package directions. Slice each section in half lengthwise and slice into 1/2 inch sections crosswise. Spray soup pot with cooking spray. Put sausage, chicken, celery, onion, tomato, zucchini noodles and garlic into pot and sauté for about 5 minutes or until onions and celery are soft. Add the chicken broth, stir, and bring to a boil. Bring heat down to a simmer and simmer for 20 minutes. Add oregano and thyme and stir. Cook for another 1-2 minutes and serve.

Serving Size: Makes 12 - 1 cup servings
