Introduction

Ingredients

    about 5 medium red skinned potatoes, diced in 1/2" cubes
    Finely chopped Onion
    Finely chopped fresh herb, thyme,parsley, what flavor you like
    1-2 Tbsp Olive Oil
    1/2-2 garlic cloves (depends on how much you like garlic)
    1 Tbsp salt
    salt and pepper to taste

Tips

The flavors get much stronger when chilled. Use caution if you don't like garlic or onion a lot. I usually stick to the lower edge of the toppings, the oil,onion, garlic because I like it lightly covered and I don;t want it too strong the next day.


Directions

Bring to boil diced potatoes covered by water with 1 Tbsp salt in pan.
Once boiling, simmer until fork tender about10 min.
Cool off in iced water to stop cooking.
Let dry or dry potatoes when ready to use.
Mix sauce together while the potatoes cook.
Place oil, 1-2 T onion, 0.5 garlic or more to taste, herb chopped, 1 T that you like, Parsley,thyme.
Pour over the potatoes and either served warm or cold.
Salt and pepper to taste.
