Ingredients

    2.5 cups old fashion oats
    1 cup greek yogurt
    2 medium eggs
    1/2 cup honey
    2 tsp baking soda
    2tsp baking powder
    2 tbsp ground flax seed
    1 tsp vanilla
    2 ripe bananas

Tips

i add carrots and apples with cinamon and nutmeg sometimes just to change it up. just use one banana one apple and about half a cup of carrots. you can also place a small piece of fruit like rassberry in center of tin cup then pour batter on top. adding yourfavorite gronola to the top about half way through the baking step is also tastey. i make several batches and freeze them and transfer to the refrigerator as needed. just warm up in microwave and they are yummii breakfast.


Directions

preheat oven 350 degrees
grind oats into flour consistancy in blender
set oats aside
blend the remainder of ingredients in blender until liquified
pour oats back into blender and mix
spray muffin tin with oil
depending on depth of muffin tin makes 18-24 muffins
fill each almost to top
bake for 20 minutes
