Ingredients

2 lbs Ground Chuck
1 Carrot - diced
2 - Medium Onions - diced
Salt and Pepper
2 Eggs - or Egg Substitute Equivalent - Calculated with raw egg- large
1 C - Raw Long Grain Rice - White or Brown - Recipe is calculated with white
25 Cabbage Leaves
Sauce -
1 - 8 ounce can of diced tomatoes
1/2 C brown sugar
33 ounce can of tomato sauce - no salt added
2/3 C water
1/4 C fresh squeezed lemon juice
Tips
I put the head of cabbage in a large pot of boiling water. Before doing so, I make a cut around the core. I then place a large carving fork in core and with a tongs peel each leaf. You can also remove them ahead of time and steam or boil til pliable.
Directions
Boil or Steam 25 cabbage leaves. Combine, Ground chuck, carrot, onions (diced), eggs and rice in a bowl. Stuff and roll leaves. Place in a greased 9x13 inch pan.
Combine remaining ingredients and pour over stuffed cabbage.
Bake covered @ 475 for 1 hour. Remove foil and bake uncovered an additional 15 minutes.
