Ingredients

8 Iceberg Lettuce Leaves
2 Tbsp. Soy Sauce, low sodium
2 Tbsp. Dark Sesame Oil
1 Tbsp. Hoisin Sauce
1 tsp. Cornstarch
8 oz. Pork Loin, trimmed\
2 Tbsp. Coconut Oil
2 c. Cabbage, shredded
1/2 c. Carrots, cut into matchsticks
1/2 c. Mushrooms, sliced
1/2 c. Water Chestnuts, sliced
3/4 c. Green Onions, sliced
1/4 c. Water
2 tsp. Garlic, minced
Tips
The original recipe uses savoy cabbage and savoy cabbage leaves as the wrap. GREAT served with steamed Edamame pods, or some fried rice noodles. Also good over rice, instead of as a lettuce wrap.
Directions
Remove and rinse 8 large lettuce leaves. Prepare vegetables, keeping separate. Slice pork into 1/4" X 1/4" strips.
In a medium bowl, combine soy sauce, sesame oil, hoisin and cornstarch. Add pork, mushrooms, water chestnuts and carrots to the sauce; toss to combine.
Heat a large skillet (or Wok) over medium-high heat. Add 1 Tbsp. Coconut oil. Add 1/4 c. onions, sauté 30 seconds. Add cabbage and water, sauté 2 minutes then remove from pan. Add remaining 1 Tbsp. Coconut oil. Add remaining onions and garlic and sauté 30 seconds. Add pork mixture, cook 3 minutes, stirring frequently. Add cabbage and toss to combine.
Serving Size: Makes 4, 2 wrap servings (approx. 1c. filling per serving)
