Ingredients

    3/4 cup brown sugar, packed
    1/2 cup white sugar
    1 1/4 cup unsweetened apple sauce
    1 egg
    1 1/2 cup flour
    1 teaspoon salt
    1 tablespoon cinnamon
    1 1/2 teaspoon vanilla extract
    1/4 teaspoon nutmeg
    1 teaspoon baking soda
    4 cups old-fashioned oatmeal
    1 cup raisins (optional)

Tips

Salt can be eliminated. Less cinnamon can be used. 1 teaspoon is normal for the recipe, but I like cinnamon. Raisins are optional.


Directions

Mix ingredients in the order listed in the ingredients list, one at a time, except for salt through baking soda, which can be mixed all at once. Let site for five minutes, so oatmeal will absorb some of the moisture from the apple sauce.

Spoon onto greased baking sheets and bake at 350 degrees in a pre-heated oven for 8-10 minutes.

Take off cookie sheet and cool on a wire cooling rack.
