Ingredients

    1 lb ricotta cheese, fresh
    1 large onion, finely chopped
    1/2 cup Parmesan cheese, grated
    1 tablespoon lemon zest (the zest of 1 lemon)
    1 teaspoon black pepper, coarse
    3 tablespoons wheat gluten (optional)
    1 dash salt
    2 teaspoons baking powder
    1 -2 tablespoons parsley
    2 large eggs, beaten
    3 tablespoons olive oil
    1- 6.4 oz. tuna packet

Tips

For added crunch deep fry each square for 4 minutes flipping after two minutes for even browning. The gluten in this recipe is optional.


Directions

Saute the chopped onions in a pan with the olive oil. Stir untlil they are soft. Put onions to the side to cool. Mix together the Parmesan cheese, black pepper, baking powder, salt, lemon zest, and the wheat gluten together first in a bowl. Once the dry are incorporated add the ricotta cheese to the dry mix. In a separate bowl beat the 2 eggs together. Add the egg to the mix. Add the onion and oil to the mix and stir. Add the tuna and stir. Pre-heat the oven to 325 degrees. Spread mix evenly onto an non stick 13 x 9 inch pan. Bake in oven for 25 minutes. Cut into 21 equal squares.
